CORN PROTEIN GLAZE ZEIN

Description:       A somewhat viscous solution with light amber color.

pH:                       Between 6.5 and 7.5

Solid:                  10% or 20% weight - all natural edible vegetable protein (ZEIN)

Solvent:             Hydrous Isopropanol

Uses:      As a general reference to the user, the G-10 and G-20 f coat with all natural vegetable protein can be used as a direct volume substitute for a 3 lb. or a 6 lb. cut of shellac. G-10 or G-20 film coating solution can be thinned down, if desired, with 90% IPA. The G-10 or G-20 film coat can be ladled on, as a shellac coating traditionally is, or it can be sprayed by customary spraying
equipment.  Only a few modifications are necessary to convert a stainless steel standard sugar coating pan into a G-10 or G-20 film coating pan.  Ribs or baffles should be added to the pan to aid the tumbling and prevent sliding of the candy.

For baffles in a smooth pan, Freeman recommends from 4-6 evenly spaced “Tygon” or vinyl tubing sections, secured and covered with 3 inch masking tape. Since the solvent evaporates quickly, less diluting can be used during the procedure than is used with shellac, if the ladling technique is used.  A warm, not hot, air flow directed toward the rear of the pan is recommended to speed the drying of the candy, or other products being coated during the coating operation.  The regular
exhaust system for the coating pans should be adequate for venting the vapor.   Since the vapors may be flammable, precautions must be observed.
